Frequently asked questions

Different types of Japanese rice vinegar are made from various ingredients, but rice is always the key. White vinegar comes from unpolished white rice, while brown and black vinegars are made from brown rice for a richer flavour. Red vinegar, on the other hand, is produced from sake lees – a byproduct of sake brewing that adds a unique character to the final product.

Some varieties of vinegar are aged for years to develop deeper flavour and complexity. Whilst light rice vinegars are typically aged for a shorter time, darker varieties such as black vinegar may mature for several years.

White rice vinegar and seasoned rice vinegar are often used in sushi rice dishes and salads, such as this cucumber and wakame salad, due to their lighter and less overpowering flavour. In some cases, brown and black vinegar can also be used in salads, but typically they’re used in dipping sauces and marinades, such as in this seared tuna tataki. Finally, red vinegar can be used whenever you want to add a tangy, acidic flavour to balance rich dishes or add brightness to other sauces and dressings.

If you’re based within the USA* and Canada, deliveries are calculated using DHL live carrier rates and are shown when you enter your delivery address.  Important notice: the USDA/AAFC has determined it illegal to import fresh plants or produce to the US due to customs restrictions, and so you will not be able to check out if you have any of these items in your shopping basket. All the shelf stable/ambient products are available for purchase. 

*USA please note: From 29th August 2025, the $800 de minimis threshold for US imports is being removed. This means that all shipments sent to the United States will now be subject to duties and taxes, regardless of value.

Our ethos is based on sustainability and sourcing ingredients ethically – our farm specialises in providing quality ingredients to top chefs, and you at home! We use 100% recyclable packaging for all our orders, and everything in our collection has been selected with sustainability in mind.

Yes, customers who are local or are going to be in the area, can select “Pick Up At Store” at checkout and  collect their orders directly from our distribution centre, located in Waddock Cross, Dorchester, Dorset. Orders placed Monday to Thursday 11am can be collected the next day between 8.30am and 4.30pm, Monday to Friday.
