Cooking is a delicate process best undertaken as follows:

  1. Immerse the somen in 2L boiling water
  2. Stir gently for 4 minutes until translucent
  3. Taste to check the texture
  4. Remove from heat and transfer to a colander
  5. Rinse with very cold water, stirring gently
  6. Drain
  7. Enjoy within 5 minutes of rinsing for optimal flavour and texture.

Artisanal somen noodles with the aromatic and complex flavour of yuzu. Handmade over two days using only wheat flour, salted water and yuzu powder they are best served cold with a dashi or soy dressing.
