Soy sauce is an important ingredient in Japanese cooking. Traditionally brewed from soybeans, wheat, salt and water, it’s fermented slowly to develop savoury depth and balance. Japanese soy sauce, which usually includes wheat, has a softer, rounder character that works just as well for dipping sushi as it does for seasoning rice, noodles, marinades and dressings. Versions brewed without wheat tend to taste sharper and more salt-forward, which can suit particular dishes or preferences.
Many of the condiments in this range are used to introduce contrast. Ponzu combines citrus and soy, bringing a clean, sharp edge that pairs well with grilled vegetables, fish and tofu. Kosho adds gentle heat with citrus aroma, while Japanese BBQ sauces and chilli sauces bring richness and warmth without masking the ingredients underneath.
