The flavour of fresh wasabi

Fresh wasabi offers a unique and highly distinctive culinary experience. It can be likened to a harmonious symphony of tastes, with enigmatic heat and flavour.

Unlike its powdered counterpart, fresh wasabi offers a sophisticated, multi-layered profile that is at once earthy, sweet, and herbaceous, with a subtle heat that gradually intensifies before fading away without leaving a lingering burn.

Its taste is clean and refreshing, with hints of greenery and a slight tanginess that adds a compelling depth.

Preparing fresh wasabi

Breaking wasabi down at the cellular level is vital to bring together compounds that are held in different parts of the cell.

The enzyme reaction that results is responsible for both flavour and pungency. This will peak after 5-7 mins, hold for 15 mins, and then slowly reduce.

For this reason, wasabi is served at the table and grated little and often.

The wasabi grater brush included in the collection will help you mix the wasabi and gather all of the valuable paste from the grater.

Storing fresh wasabi

Our Wasabi Mayonnaise is truly one of a kind.

The fresh-tasting, all-natural mayonnaise is perfectly balanced with the mild, authentic flavour of fresh wasabi, grown in spring water on our Dorset and Hampshire farms.

Wonderfully moreish and versatile, this is the only mayonnaise in the world made with English wasabi.

Distinguished by a gentle yet lively taste, emboldened by the pungent heat of the fresh wasabi root, the wasabi mayo still retains a sweet moreish flavour.

Serve with smoked salmon canapés, spread liberally on your favourite sandwich or liven up a potato salad.

Wasabi Vodka

Our craft vodka captures the elusive flavour of fresh wasabi like never before, by carefully distilling UK-grown wasabi in copper pot stills with an artisanal small batch of vodka.

Single-distilled and unfiltered, the spirit retains a natural creamy smoothness. Buttery at the start, brassica flavours of sweet mustard and radish give way to high notes of star anise and pepper, followed by a complex lingering warmth.

Fresh wasabi paste, straight from our Dorset and Hampshire farms, is used for maximum flavour and to get the distinctive pungency of real wasabi.
